So Mike schedule has been great for the both of us he has been able to come home around dinner time and that gives him time to do his favorite thing STUDY!!!!
So I have finally been cooking for the both of us and my mother-in-law gave me a big stack of recipes before we left Boise and this one is my favorite one that I have cooked so far.
Orange Walnut Chicken
3T. Orange Juice Concentrate
3T. Vegetable oil (divided)
1T. Soy Sauce
4 Boneless, Skinless Chicken Breast
1/2C. Coarsely Chopped Walnuts
1T. Butter
4 Green Onions thinly sliced (divided)
1/2C. Orange Marmalade
1/2C. Orange Juice
1/4C. Lemon Juice
2T. Honey
1T. Orange peel
2T. Lemon peel
1/2t. Salt
1/8t. Pepper
Put over Hot cooked Rice
In a large resealable plastic beg, combine orange juice concentrated, 2T. oil, soy sauce and garlic. Add chicken; seal bag and turn to coat. Refrigerate for 2-3 hours or overnight.
Remove chicken; reserve marinade. In a skillet, cook chicken in remaining oil until juices run clear. Meanwhile, in a saucepan, saute walnuts in butter until lightly browned; remove and set aside. Set aside 1/4C. green onions for garnish. Add remaining onions to saucepan; saute until tender. Add reserved marinade and the next eight ingredients. Bring to a rolling boil; boil for 2 mins. Reduce heat; simmer, uncovered, for 5-10 mins. or until sauce reaches desired consistency. Serve chicken over rice; top with sauce and reserved walnuts and onions.

Sounds Delish!!! I just need now the desire to go to the grocery to buy all that yummy stuff. I HATE to go to the grocery! But this recipe looks so dang yummy...
