Happy Halloween
Well Mike had to work a little bit later so some of his coworkers could get home to take their kids trick-or-treating, so we did not do much but Mike got his pumpkin carved he was really excited and it looked great.

Orange Walnut Chicken
So Mike schedule has been great for the both of us he has been able to come home around dinner time and that gives him time to do his favorite thing STUDY!!!!
So I have finally been cooking for the both of us and my mother-in-law gave me a big stack of recipes before we left Boise and this one is my favorite one that I have cooked so far.
Orange Walnut Chicken
3T. Orange Juice Concentrate
3T. Vegetable oil (divided)
1T. Soy Sauce
4 Boneless, Skinless Chicken Breast
1/2C. Coarsely Chopped Walnuts
1T. Butter
4 Green Onions thinly sliced (divided)
1/2C. Orange Marmalade
1/2C. Orange Juice
1/4C. Lemon Juice
2T. Honey
1T. Orange peel
2T. Lemon peel
1/2t. Salt
1/8t. Pepper
Put over Hot cooked Rice
In a large resealable plastic beg, combine orange juice concentrated, 2T. oil, soy sauce and garlic. Add chicken; seal bag and turn to coat. Refrigerate for 2-3 hours or overnight.
Remove chicken; reserve marinade. In a skillet, cook chicken in remaining oil until juices run clear. Meanwhile, in a saucepan, saute walnuts in butter until lightly browned; remove and set aside. Set aside 1/4C. green onions for garnish. Add remaining onions to saucepan; saute until tender. Add reserved marinade and the next eight ingredients. Bring to a rolling boil; boil for 2 mins. Reduce heat; simmer, uncovered, for 5-10 mins. or until sauce reaches desired consistency. Serve chicken over rice; top with sauce and reserved walnuts and onions.
This was so good so I hope you guys try and enjoy!!!

Finally a Vacation
Mike and I were so excited to get out of town this past week and just have a little fun together and the best part is that we got to spend time with both families so it was great.
We first got to Boise and had a great weekend with them so here are a few pictures so you can see the fun!!!!

The kids were getting bored and hot so good Uncle Mikey went and bought a pool for the kids to play and don't you worry he made his appearance, but he would not let me post the picture sorry.

Crazy Life
Well I am not a big fan of just writing to tell you what has been going on in our lives but we have not been doing anything fun but working.
Mike has been in a conference room for about 15hrs a day and I have been driving back and forth between my now two properties that I manage. I still nanny and do hair also on top of that. It is defiantly a CRAZY, BUSY LIFE!!!
Coming soon will be some pictures of the property where we live and the one I just took over. I know so exciting, but I am proud because the apartments are getting filled pretty fast yeah play time might be coming sooner that I thought.
Here is a little more on Mike he finally got a standing ovation award. It is defiantly well deserved and long over due for all of the hours he puts in.
Well I hope all family and friends are doing well and we love you all!!!

Easter
Easter weekend was so much fun my mom's birthday was on the 21st so I flew in and suprised her for her birthday. It was so much fun and Dave did a wonderful job getting us all together. Thanks Dave :)
Easter Sunday was my neice Taylor's birthday so Hayley put together a great birthday/easter party for the family on Saturday. It was so good to see everyone.
The Same weekend was Dave's and Justin first weekend in the world finals for Chariot racing so I hung out all day on sunday up at the track with my mom (she loves it when she has someone to hang out with)!!! It was a great weekend to go home.
